Oyster Mushroom Stir Fry

Ingredients:
- 1 Cup Dried Oyster Mushrooms
- 2 Tablespoons Vegetable Oil
- 2 Cloves Garlic, Minced
- 1-Inch Piece of Ginger, Grated
- 1 Bell Pepper, Thinly Sliced
- 1 Carrot, Julienned
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Oyster Sauce (optional)
- 1 Teaspoon Sesame Oil
- 1/2 Teaspoon Sugar
- Green Onions, Chopped (for garnish)
Instructions:
- Place the dried oyster mushrooms in a bowl and cover them with hot water. Let them soak for about 15-20 minutes or until they become soft and pliable. Drain the mushrooms, reserving the soaking liquid.
- Squeeze any excess water from the mushrooms and tear them into smaller pieces.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the rehydrated oyster mushrooms to the skillet and stir-fry for 3-4 minutes until they become tender.
- Add the sliced bell pepper and julienned carrot to the skillet and continue stir-fryingfor an additional 2-3 minutes until the vegetables are crisp-tender.
- In a small bowl, mix together the soy sauce, oyster sauce (if using), sesame oil, and sugar. Pour the sauce over the mushrooms and vegetables, and stir-fry for another minute, allowing the flavors to meld.
- If the mixture becomes too dry, add a few tablespoons of the reserved mushroom soaking liquid to keep it moist.
- Remove the oyster mushroom stir-fry from the heat and transfer it to a serving plate. Garnish with chopped green onions.
- Serve the oyster mushroom stir-fry as a side dish or as a main course with steamed rice or noodles.
Note: You can add other vegetables such as broccoli, snow peas, or baby corn to the stir-fry for more variety and texture. Adjust the seasonings according to your taste preferences.
