Oyster Mushroom Masala

Ingredients:
- 200 grams oyster mushrooms
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 teaspoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to spice preference)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Clean the oyster mushrooms by gently wiping them with a damp cloth or paper towel. Tear them into smaller, bite-sized pieces.
- Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the tomato puree and cook for a few minutes until the oil separates from the masala.
- Add the oyster mushrooms and stir well to coat them with the masala. Cook for 6-8minutes until the mushrooms are tender.
- Sprinkle garam masala over the mushrooms and mix well.
- Remove from heat, garnish with fresh cilantro leaves, and serve hot with rice or roti
